Champagne Shallot Vinaigrette

1 Shallot, minced
1 TBS dijon mustard
3 TBS Champagne vinegar
1 TBS fresh lemon juice
2 tsp lemon zest
1 TBS honey
1/4 Cup Olive oil
sea salt and black pepper

Whisk everything together except olive oil.  When combined, slowly drizzle in the olive oil while whisking vigorously.
